What is the difference between the E 85 carburetor and a alcohol carburetor ??
Is it possible to just change jets ??

Ethanol is the base for E85

Methanol is what is commonly referred to as alcohol or ALKY in the racing world.

those 2 fuels are completely different and have completely different component requirements and calibration to operate properly

The Holley E85 carb has a factory coating to protect the metal.  Carbs are probably the highest $ per horsepower gain ratio in racing.  I'd guess the average weekend racer only gets about 70% out of what any 'race' carb can do. You'd need a special carb guy to keep up with all the variables during a race event.
